One of my resolutions for 2013 was to cook more and be a bit more
experimental in the kitchen. It's so easy to get stuck in a rut and I
found myself using the same recipes and going for similar meals each
week. I've been trying a new recipe each week so far and one of my
favourites has been chilli bean tortillas, from the 101 Cheap Eats Good
Food cookbook.
Here's the recipe if you fancy making this version: (Serves 4)
Ingredients:
500g pack mince
1 onion, chopped
1 tsp mild chilli powder
1 tsp ground cumin
400g can chopped tomatoes
200g red kidney beans
8 flour tortillas
Shredded lettuce leaves
Grated cheddar
1. Gently heat the mince to release some of the fat. Increase the heat, add the onion and cook for 7 minutes, stirring occasionally. Add the chilli and cumin and cook for 1 minute, stirring. Tip in the tomatoes and kidney beans and bring to the boil.
2. Reduce the heat, cover and cook for 30 minutes until the mince is tender, and then season. Warm the tortillas in the microwave.
3. Top each tortillas with lettuce and spoon on some chilli mince. Sprinkle with cheese (add in a little soured cream if you want!) then fold the edges over to enclose the filling. Eat immediately!
You can either serve the chilli with rice or my new favourite, in tortillas! It wasn't the most photographic dish so I've included the photo from the book instead of my own, I fill mine with lettuce and cheese and they are deee-lish.





I've never thought of putting chilli in a wrap - will definitely have to try that!
